5 Ways to Eat Beans

Yeah, you heard me. Freaking beans, yo. These guys are high in everything good for you and low in fat. Not only do beans contain lots of protein, fiber, Vitamin B, potassium, and iron, they also fight against diseases such as diabetes and heart disease. Yup.

I guess that’s part of the reason why I enjoy eating beans. The big reasons are because they’re both cheap, filling and delicious.

Here are five ways this little home girl eats her beans.

Tacos, Quesadillas, Burrito Bowls…Whatever. 
I feel like most people buy beans solely for fiesta nights. Get some tortilla wrap and add beans to that ish. Sometimes, I just eat black beans mixed with sour cream and some sauteed meat. Add some rice to your bowl and it’s essentially a ghetto burrito bowl from Chipotle. Voila. I also want to add that refried beans are the bomb.

Layered Nacho Dip. 
I have this layered nacho dip that I make every time it’s July 4th or a big game day like the Superbowl. Oh, so fattening for you, but such a crowd pleaser. I like to buy a can of cooked pinto beans, mash them, layer it on top of the cream cheese, put ground beef, sour cream, salsa and cheese…bake for 30 minutes and BOOM. Nachoooooo.

Glutinous Purple Rice and Beans.
Here’s a nifty little dish when you’re just lazy, and you want to spruce up your plain old white rice. Mix that ish with some beans, and you will end up with a nice and nutritious bowl of goodness. Have you ever seen Korean purple rice with beans? That’s what I’m talking about. Here’s a random multi-grain rice recipe I googled to make this.

Kidney Beans in a Salad. 
I used to eat a lot of salad around the second half of college. Mainly because I gained the Freshman 20 my first half in school. FML. But I would make a butt ton of salads…cabbage, egg salad, seeds, spinach…blah. What I really enjoyed mixing in with it would be red kidney beans. Eating salad without beans just makes me feel empty and sad inside.

Soups, Stews and Gumbo. 
Check it out. You can add beans to a bunch of different soups. Chicken noodle, ham, Tuscan, vegetable, stew…but the main soup/stew…my favorite kind of bean soup is Gumbo. YUM. I’m surprised Paula Deen’s gumbo recipe doesn’t include beans. Simply adding beans to a soup can add flavor, nutrition, and that UMPH you’re looking for in well-rounded soup.


Anyways, I wanted to share that. There are so, so many more ways to eat beans too. I’ll share more ideas in another post. These are just the ways I’ve been eating beans lately. I bought 2 really large cans of them when I last went grocery shopping.
